Chipotle Mexican Grill

  • Chipotle Mexican Grill started with an $85,000 loan from the founder's father and a very specific break-even target. Steve Ells and his father calculated that the first store needed to sell 107 burritos a day to turn a profit. After one month, it was selling more than 1,000 a day.

That store sat at 1644 East Evans Avenue in Denver, Colorado, near the University of Denver campus. The building had been a Dolly Madison Ice Cream store. Today most Chipotle restaurants display a photograph of that original location. The original itself displays a photograph of the ice cream shop it replaced.

By December 2025, the company had 4,000 locations. Its name comes from chilpoctli, the Nahuatl word for a smoked and dried jalapeño.

Behind that growth sit harder questions. Why did a company devoted to a narrow menu keep opening restaurants that served something else entirely? What happens to a promise of fresh food when customers get sick? And how does a company change when its founder finally leaves?

  • On the 13th of July 1993, Steve Ells founded Chipotle after years of learning how professional kitchens work. He trained at the Culinary Institute of America in Hyde Park, New York. Afterward he became a line cook for Jeremiah Tower at Stars in San Francisco.

There, Ells noticed how popular the taquerias and burrito shops of the Mission District were. He wanted to prove that fresh ingredients could be served quickly. That idea made Chipotle one of the first fast casual chains, serving bowls, tacos and Mission burritos made to order in front of the customer.

A fine-dining restaurant was Ells's original goal for the profits from his first Chipotle. When the burrito shop succeeded, he focused on it instead.

The second store opened in 1995, paid for with the first store's cash flow. The third was funded by an SBA loan. To keep growing, Ells's father invested $1.5 million. Ells then created a board of directors and a business plan, and raised another $1.8 million.

In 1998 the first restaurant outside Colorado opened in Kansas City, Missouri. That same year, a far larger backer arrived.

  • When McDonald's made a minority investment in Chipotle in 1998, the chain had 16 restaurants, all of them in Colorado. By 2001, McDonald's had become Chipotle's largest investor. The money helped the chain grow past 500 restaurants by 2005.

On the 26th of January 2006, Chipotle went public. Heavy demand before the offering led the company to raise its share price twice. On its first day of trading, the stock rose exactly 100%. That made it the best U.S.-based IPO in six years, and the second-best restaurant IPO after Boston Market. The proceeds paid for new stores.

In October 2006, McDonald's sold off its remaining stake in Chipotle. The move was part of a plan to divest all of its non-core restaurant businesses, which also included Donatos Pizza and Boston Market. That let the company focus on the main McDonald's chain. McDonald's had invested approximately $360 million in Chipotle and took out $1.5 billion.

The partnership had friction. McDonald's tried to get Chipotle to add drive-through windows and a breakfast menu, and Ells resisted. Drive-through windows would return to the Chipotle story years later in a very different form.

  • In 1999, an article by Edward Behr sent Ells to visit Concentrated Animal Feeding Operations while he looked for ways to improve the taste of the carnitas. Ells found the operations horrific. He began sourcing pork from open-range suppliers. The price of the carnitas burritos rose, and so did their sales.

In 2001, Chipotle released a mission statement called Food With Integrity. It highlighted naturally raised meat, organic produce, and dairy without added hormones. Ells also testified before the United States Congress in support of the Preservation of Antibiotics for Medical Treatment Act, which aimed to reduce the antibiotics given to farm animals.

From 2006 to 2012, the Coalition of Immokalee Workers, a Florida farmworker organization, protested Chipotle's refusal to sign a Fair Food agreement. The agreement would have required a penny-per-pound premium on Florida tomatoes to raise harvesters' wages. It would also have limited tomato purchases to growers who follow the Fair Food Code of Conduct.

In 2009, the creators of the documentary Food, Inc. and 31 other leaders in the sustainable food movement signed an open letter backing the coalition. In September 2009, Chipotle chose to work directly with East Coast Growers and Packers on tomato pickers' wages instead. Ells framed the dispute as a question of control. He said, "the CIW wants us to sign a contract that would let them control Chipotle's decisions regarding food in the future." Chipotle signed an agreement with the coalition in October 2012.

On the 12th of September 2013, Chipotle released an animated short called The Scarecrow, with a companion mobile video game. Both carried a story heavily critical of industrial farming, with little direct marketing for the chain. Fiona Apple sang a cover of "Pure Imagination" for it. The Wall Street Journal named it one of the worst advertisements of 2013.

In January 2015, Chipotle pulled carnitas from a third of its restaurants. Company officials cited animal welfare problems at one supplier, found during a regular audit. A false rumor then spread online claiming the move was meant to appease Muslims, and some people protested on social media. Later that year, Chipotle stopped using genetically modified corn and soybeans, claiming to be the first nationwide restaurant to cook completely GMO free.

The promises did not always hold. In 2019, Chipotle paid $6.5 million to settle a lawsuit claiming its food may have come from livestock fed GMO animal feed. In 2017 it had committed to moving away from birds bred to maximize growth at the expense of animal well-being, but investigations by animal welfare groups in 2024 showed it was failing to meet those standards.

Roberto Ferdman of The Washington Post wrote that the mission to sell food with integrity may be "untenable" if meat producers keep breaching Chipotle's ethical standards.

  • Five items make up the Chipotle menu: burritos, bowls, tacos, quesadillas and salads. The price depends on the protein, chosen from chicken, pork carnitas, barbacoa, steak, tofu-based sofritas or a vegetarian option. Toppings such as rice, beans, four types of salsa, fajita vegetables, sour cream, cheese and lettuce cost nothing extra.

Despite the Mexican Grill name, the menu is better described as Cal-Mex, a Mexican-American cuisine rooted in California. In 2007, Ells explained the narrow list by saying it was important to keep the menu focused, because "if you just do a few things, you can ensure that you do them better than anybody else."

No Chipotle restaurant has a freezer, a microwave oven or a can opener. Most food is prepared in each restaurant. The exceptions are the beans and carnitas, which come from a central kitchen in Chicago, Illinois.

In 2013, Chipotle began testing sofritas, made by Hodo Soy, in Northern California restaurants. After a successful trial, it rolled out nationwide in 2014. Chorizo had a rougher path. An earlier version tested in Denver and New York City in 2011 was dropped because it looked too greasy. A new version tested in the Kansas City area in June 2015, and food writers raised concerns about its sodium. A 4 ounce serving held 803 milligrams. Chorizo was discontinued in September 2017 and returned for a limited time the next year.

In July 2020, cauliflower rice was tested at 55 locations in Colorado and Wisconsin. A plant-based chorizo made with pea protein ran nationwide from the 3rd of January 2022 to the 4th of March 2022.

In late 2021, the menu gained a non-food item, cilantro soap. It sold out the day after its release. The idea grew from an August 2021 Instagram post of what was thought to be a mock photo, and it was meant to engage both fans and haters of the herb.

A 2003 report from the Center for Science in the Public Interest said Chipotle's burritos contain over 1,000 calories, nearly two meals' worth. A burrito with carnitas, rice, vegetables, cheese, guacamole and salsa had more fat, cholesterol, carbohydrates and sodium than a typical Big Mac. It also had more protein and fiber. Health.com praised the chain on its list of the healthiest fast food restaurants.

In June 2024, customers on TikTok accused Chipotle of shrinking its portions. A Wells Fargo analyst and his team ordered 75 identically configured items from 8 New York City locations and weighed each bowl. Weights ranged from 14 to 27 ounces, with a median of 21.5 ounces.

  • In its own annual reports, Chipotle has acknowledged it may face a higher risk of food-borne illness than some competitors. The company uses fresh produce and meats rather than frozen, and it relies on employees cooking by traditional methods rather than automation.

The first warnings came in 2008. In March and April, health officials in San Diego County traced a hepatitis A outbreak to a single restaurant in La Mesa, California, where 22 customers were infected. Later that year, more than 400 people became ill after eating at a Chipotle in Kent, Ohio. Many were students at Kent State University, and the initial source was never found.

The summer and autumn of 2015 were far worse. In July, five people were infected with the O157:H7 strain of E. coli after eating at a Seattle location. The outbreak went unpublicized until The Oregonian reported it in November. In August, a norovirus outbreak in Simi Valley, California, affected more than 200 people. A federal grand jury issued a subpoena in January 2016 as part of a criminal investigation.

At almost the same time, Minnesota officials confirmed a Salmonella outbreak traced to contaminated tomatoes grown in Mexico. It eventually reached 64 people and 22 Chipotle locations, all in Minnesota.

In October 2015, an outbreak of Shiga toxin-producing E. coli, strain STEC O26, was linked to restaurants in Washington and Oregon. Chipotle closed 43 stores as a precaution. They reopened on the 11th of November after disposing of all food and deep cleaning. When the Centers for Disease Control and Prevention closed its investigation on the 1st of February 2016, it reported 55 infected people in 11 states. Twenty-one required hospitalization, and there were no fatalities. Authorities never identified a specific source.

In December 2015, a norovirus outbreak near Boston College sickened approximately 140 people, many of them students. The Boston Public Health Commission traced it to a sick employee who had been allowed to work.

On the 10th of December 2015, Ells released a statement apologizing for the outbreaks and promising changes. Chipotle closed all of its locations on the 8th of February 2016 for an all-staff food safety meeting. It also hired a new head of food safety, who introduced more frequent handwashing, produce sanitation procedures and Pascalization to pre-treat ingredients.

Problems returned in July 2017, when more than 130 people reported norovirus-like symptoms after eating at a restaurant in Sterling, Virginia. Shares dropped more than 10%. Chipotle later confirmed that lax enforcement of its sick policy by store managers was the cause.

In late July 2018, public health officials in Ohio received 350 complaints from customers of a restaurant in Powell. By mid-August, more than 700 people had been affected by Clostridium perfringens. That outbreak has been called the worst incident traced to a single restaurant location.

  • Soul Daddy operated three locations in 2011 and closed within weeks. It was the winning concept on the television show America's Next Great Restaurant, where Ells served as a judge. Ells was also an investor in ANGR Holdings, the company set to run the winner's restaurants. Chipotle agreed to buy his investment at his cost and to contribute a total of $2.3 million in cash.

In September 2011, Chipotle opened ShopHouse Southeast Asian Kitchen in Washington, D.C. It followed the Chipotle service format and its focus on food with integrity. The plan was to start with one store and see how the concept worked before expanding. The chain eventually grew to 15 locations, and all were closed in March 2017.

On the 29th of July 2016, Chipotle announced its first Tasty Made burger restaurant. The only location opened in Lancaster, Ohio, in October 2016. It closed in February 2018.

Pizzeria Locale lasted longer. It began in 2013 as a partnership with the original restaurant of that name in Boulder, Colorado. The chain reached seven locations by 2017, then contracted after closing locations outside Colorado in 2018. In July 2023, Chipotle announced it would close the rest and dissolve the business.

In 2023, Chipotle opened Farmesa Fresh Eatery in Santa Monica, California. Customers built bowls from a protein, a green or grain, two sides, a topping and up to five sauces. Choices included steak, salmon, whipped potatoes, sweet potato chips, beets and cauliflower. Chipotle abandoned the concept in April 2024.

The original Boulder restaurant of Pizzeria Locale was never owned by Chipotle. It was renamed Pizzeria Alberico.

  • On the 13th of February 2018, Chipotle announced that Taco Bell CEO Brian Niccol would replace Ells as chief executive starting on the 5th of March. Many industry analysts praised the choice, saying the chain "needed new blood." Others warned that "the move goes against everything the burrito chain stands for." The stock rose $30.27, or 12.04%, on the news.

Earlier, Monty Moran had been promoted to co-CEO alongside Ells in January 2009, and he stepped down in December 2016. Ells announced in November 2017 that he would step down as CEO. He kept the chairman role until the 6th of March 2020, when he resigned and left the board. Niccol became chairman. Glassdoor reported that Ells earned $29 million in 2014, against a median of $19,000 for Chipotle's workers. That was a pay ratio of 1522:1.

In May 2018, Chipotle announced the Chipotlane and began testing it. It works like a drive-thru, but only for mobile order pickup, since customers cannot order at the window. By 2023, more than 500 locations included one. Also in May 2018, the company announced it would move its headquarters from Denver to Newport Beach, California, affecting 400 workers. In June 2018, it announced the closing of 65 under-performing restaurants.

On the 13th of August 2024, Starbucks announced it was hiring Niccol. Chief Operating Officer Scott Boatwright became interim CEO at the end of that month. The board named him permanent CEO in November 2024.

In January 2023, Chipotle announced plans to hire 15,000 workers and expand to 7,000 locations, up from a previous goal of 6,000. It already had more than 100,000 employees. The Wall Street Journal noted that the chain would focus on opening 700-800 new locations in small towns and cities, territory traditionally dominated by chains like McDonald's and Applebee's. In 2023, Chipotle reported $9.9 billion in revenue, up 14.3% from the year before. Online orders, third-party delivery and Chipotlanes brought in 37.4% of it.

Overseas growth has come more slowly. Chipotle opened its first location outside the United States in Toronto in August 2008. By October 2014 it had only 17 locations abroad, and many press reviewers thought the food was overpriced for those markets. The first European restaurant opened in London in May 2010. In 2014, a restaurant at La Défense in Paris became the largest Chipotle in the world at 7000 square feet. A typical restaurant runs between 2200 and 2500 square feet.

In July 2023, Chipotle announced its first-ever franchise deal, with the Kuwait-based Alshaya Group, to expand into the Middle East. Restaurants followed in Kuwait in April 2024, Dubai in September 2024 and Doha in September 2025. By late 2025, the international portfolio held 60 locations in Canada, 20 in the United Kingdom, six in France, two in Germany, three in Kuwait and three in the United Arab Emirates.

In April 2025, Chipotle signed a joint venture with Alsea to open restaurants in Mexico by early 2026. A September 2025 joint venture with SPC Group targets the first Chipotle restaurants in South Korea and Singapore in 2026.
