Tequila
In July 2006, a single one-liter bottle of tequila sold in the town of Tequila, Jalisco for $225,000, held inside a two-kilo display case made of platinum and gold, a sale that earned a Guinness World Record for the most expensive bottle of tequila ever sold. Tequila is a distilled spirit made only from the blue agave plant, grown mainly in the red volcanic soil around the town of Tequila and in the nearby Jaliscan Highlands, where more than 300 million agave plants are harvested every year. Mexican law limits the name "tequila" to spirits made in Jalisco and a handful of surrounding municipalities, and more than 40 countries now recognize it as a protected product that cannot legally be made anywhere else. How did a drink once distilled by hand from the sap of a spiky desert plant become guarded by international trade law and turned into a $225,000 collector's item? And what actually happens inside the heart of that plant to turn it into something worth drinking at all?
Long before tequila or mezcal existed, people had already spent thousands of years brewing pulque, a fermented but undistilled drink made from agave sap. The technology to distill mezcal from the cooked heart of the agave plant arrived later, brought by Filipino sailors and migrants into the coastal regions of what was then Nueva Galicia, an area covering present-day Aguascalientes, Colima, Guanajuato, Jalisco, Nayarit, and Zacatecas. That distillation method spread into the highland valleys of Amatitán, Tequila, Magdalena, and El Arenal by the mid-1700s, and the distinctive mezcal produced there eventually earned its own name: tequila.
The growing region itself shapes the spirit. Red volcanic soil around the town of Tequila is especially well suited to blue agave, and plants grown in the highland Los Altos area turn out larger, sweeter, and more aromatic than the more herbaceous agave harvested down in the valley. In 2006, UNESCO recognized the area's historical and cultural importance by declaring it a World Heritage Site under the name the Agave Landscape and Ancient Industrial Facilities of Tequila.
Spain's King Carlos IV granted the Cuervo family the first license to make tequila commercially. Don Cenobio Sauza, who founded Sauza Tequila and served as municipal president of the village of Tequila from 1884 to 1885, became the first to export the spirit to the United States. The first tequila distillery on American soil opened in 1936 in Nogales, Arizona, run by former state senator and Nogales mayor Harry J. Karns.
In 1974, the Mexican government went a step further and declared the word "tequila" itself to be the country's intellectual property, a claim that would take decades of international negotiation to enforce.
By 2009, more than 100 distilleries in Mexico were producing over 900 brands of tequila, with more than 2,000 brand names registered, and every bottle now carries a serial number, called a NOM, identifying the distillery that made it. In 2003, Mexico proposed requiring all Mexican-made tequila to be bottled inside the country before export, a move liquor companies in the United States argued was really about creating Mexican bottling jobs at the expense of plants in California, Arkansas, Missouri, and Kentucky. On the 17th of January 2006, the two countries signed an agreement allowing bulk tequila imports to continue, alongside a new bottlers registry to track approved importers.
The Tequila Regulatory Council initially refused to let flavored tequila carry the tequila name at all, before reversing that position in 2004, except for 100% agave tequila, which still cannot be flavored.
In June 2013, China lifted its ban on importing premium, 100% blue agave tequila following a state visit to Mexico by Chinese Communist Party general secretary Xi Jinping, a move expected to raise exports by 20 percent within a decade. Ramón González, director of the Consejo Regulador del Tequila, said the top 16 producers had each invested up to $3 million to enter the Chinese market, and on the 30th of August 2013, the first 70,380 bottles from ten brands arrived in Shanghai at an event held at the House of Roosevelt on the Bund.
By 2024, tequila exports from the municipality of Tequila alone brought in roughly $572 million, most of it from sales to the United States, the industry's single largest market.
Tequila became Mexico's first appellation of origin in 1974 and, in 1978, was internationally registered for protection under the Lisbon Agreement for the Protection of Appellations of Origin. That designation restricts agave growing and tequila production to selected municipalities in only five Mexican states, chosen for a mix of geography, climate, and inherited technique. The Mexican Institute of Industrial Property, or IMPI, now administers and enforces exclusive use of the name.
Canada and the United States recognize that protection through Annex 313 of the North American Free Trade Agreement, which bars either country from selling anything as tequila unless it was lawfully made in Mexico. Enforcement in Europe proved harder: during the mid-1990s, as much as 3.5 million liters a year of pseudo-tequila, distilled from agave-like plants and mislabeled, were sold across the continent, prompting Mexico to negotiate a bilateral agreement with the European Union recognizing tequila as a protected "denomination of origin."
Mexico's tequila interests even shaped diplomacy with China. Because China has a climate suited to growing blue agave, Mexican negotiators made tequila protection a condition of their support during China's bid to join the World Trade Organization, ensuring Beijing accepted tequila as a geographically indicated product before membership was granted.
That diplomatic groundwork is the reason a Canadian importer today can dilute Mexican-made tequila with purified water to adjust its strength, but can never legally call a locally made spirit by the same name.
Growing blue agave has changed little in centuries, and the people who harvest it, known as jimadores, still rely on knowledge passed down through generations rather than modern farm machinery. Jimadores regularly trim the quiotes, tall flowering stalks that can grow several meters high, to stop the plant from flowering and dying too early. Using a long-poled blade called a coa, they cut away the leaves to expose the piña, the plant's succulent core, which averages around 70 kilograms in the valley and 110 kilograms in the highlands.
Harvested piñas are baked slowly in ovens to break their complex fructans down into simple fructose, then either shredded or crushed under a large stone wheel called a tahona. The leftover pulp fiber, or bagazo, is often reused as compost, animal feed, fuel, or paper, and some producers add a bit of it back into fermentation for a stronger agave flavor.
The extracted agave juice ferments in wooden or stainless steel vats for several days, producing a low-alcohol liquid called mosto. That mosto is distilled once into ordinario and then a second time into clear silver tequila, the minimum required by Mexican law; a few brands, including Casa Noble's Crystal and Corzo's añejo, have tried a third distillation, though most producers say it strips away too much agave flavor.
Whether that silver spirit gets bottled right away or pumped into oak barrels to age depends on decisions made long before the agave is ever planted.
Mexican law sets tequila's alcohol content at between 35 and 55 percent, or 70 to 110 U.S. proof. Fermentation itself is largely left to chance: yeasts and bacteria already present in the environment drive a process that can take as little as 20 hours with added inoculum or as long as seven days without it, ending with an alcohol content between 4 and 9 percent before distillation raises it further. The most common yeast species involved, Saccharomyces cerevisiae, includes multiple strains with different metabolisms; the CF1 strain, for instance, produces far more ethanol than CF2.
Temperature shapes the result: a study by Pinal and colleagues found that fermenting two yeast strains at 35 degrees Celsius produced more isoamyl alcohol than fermenting at 30 degrees, though heat that runs too high can make the yeast less effective, and heat that runs too low slows fermentation down. The age of the agave plant matters too. One study found that amyl alcohol concentration rose by 30 percent as the plant grew older, while younger plants yielded more methanol instead.
More than 300 compounds have been identified in tequila, many produced during fermentation. Isovaleraldehyde contributes a sweet, chocolate-like note, while 2 and 3-methylbutanal produce a malty flavor. Vanillin and syringaldehyde, both naturally present in agave, add fruity or herbal aromas, and eugenol lends a hint of spice. Baking the agave triggers Maillard browning reactions that produce furans such as 2-furaldehyde and guaiacol, both associated with tequila's smoky character. Producers assess these compounds with gas chromatography, backed by taste tests such as the duo-trio and triangle methods used to judge quality.
None of those hundreds of compounds, though, determine a tequila's final color. That comes down to a much simpler choice: how long it spends in wood.
Mexican regulation defines five categories of tequila. Blanco, or silver, is unaged or aged less than two months. Joven, or gold, blends unaged and aged tequila, sometimes with added coloring. Reposado rests in oak for at least two months but less than a year, añejo for at least one year but less than three, and extra añejo for a minimum of three years. Two more categories exist outside official regulation: cristalino, an aged tequila filtered clear again, and rosa, a young spirit lightly aged in red wine barrels.
Aging in oak triggers four chemical changes: barrel char absorbs fusel oils, the wood itself contributes new aroma and flavor compounds, components within the tequila react with one another, and oxidation alters what remains. Añejo tequila is often rested in barrels previously used for reposado, no larger than 600 liters, frequently sourced from American or Canadian whiskey distilleries, with barrels once used for Jack Daniel's especially prized.
Once a bottle is opened, tequila keeps oxidizing even without fresh air getting in, and the more empty space left in the bottle, the faster that oxidation runs; producers generally recommend finishing an opened bottle within a year or two. Unlike wine, tequila changes very little while an unopened bottle sits in storage, though a constant, moderate temperature between 60 and 65 degrees Fahrenheit, protection from direct sunlight, and an intact seal all help preserve it. A darker, more complex añejo is more likely to be affected by poor storage than an unaged blanco.
A blight called TMA, or "agave depression and death," has cut into agave production and pushed prices higher, a problem expected to persist given how long the plant takes to mature. A separate, purely cultural myth persists too: the so-called tequila worm is not found in tequila at all. It appears only in some mezcals from Oaxaca, added as a marketing gimmick, and is actually the larva of the moth Hypopta agavis; finding one during processing signals an infestation and a lower-quality batch, not a mark of authenticity.
That myth about the worm has outlasted decades of marketing meant to kill it, proof that a good story can survive long after the facts catch up with it.
In Mexico, tequila is traditionally drunk neat, sometimes alongside a shot of sangrita, a sweet, sour, and spicy chaser made from orange juice, grenadine or tomato juice, and hot chili, sipped in alternation without salt or lime. The bandera, named for the Flag of Mexico, arranges three shots side by side: lime juice for green, white tequila for white, and sangrita for red.
Outside Mexico, tequila is more often served with salt and a lime or lemon wedge, a ritual known as tequila cruda and sometimes nicknamed "lick-sip-suck," in which drinkers lick salt off their hand, drink the tequila, and bite into the fruit. This is frequently, and incorrectly, called a tequila slammer, which actually refers to a mix of tequila and a carbonated drink.
The margarita, made from tequila, Cointreau, and lime juice, became one of the drinks most responsible for tequila's popularity in the United States. In Mexico, the Paloma pairs tequila with grapefruit soda or fresh grapefruit juice, simple syrup, and carbonated water. When served neat, tequila traditionally comes in a narrow shot glass called a caballito, though in 2002 the Consejo Regulador del Tequila approved an official tequila glass, the Ouverture, made by the crystal manufacturer Riedel.
The Ouverture glass never replaced the caballito in everyday use, but its approval marked the first time an official body tried to dictate not just how tequila should be made, but how it should be drunk.
