The International Vegetarian Union formed at the first World Vegetarian Congress in Dresden on the 18th of August 1908. Albert Broadbent sent letters inviting groups worldwide to meet for this event.
Albert Broadbent, Dr. Meyroos secretary of the Netherlands Vegetarian Society and Gustav A. Selss president of the German Vegetarian Association were elected members of the IVU provisional Committee. These three individuals established the initial leadership structure during the 1908 meeting.
The 6th World Vegetarian Congress held in London in 1926 featured displays of vegetarian boots, furs, gloves, tennis rackets and violin strings all appearing without any animal substances. There was a unanimous decision to exclude membership from any society that allowed fish consumption.
William E. A. Axon served as president starting in 1909 followed by Henri Huchard in 1910 and Hugo Nolthenius until 1913. Herr B. O. Dürr led from 1926 to 1929 while Herr Carl Gumprecht served from 1929 to 1932.
Marly Winckler became Chair of IVU after the role of president was abolished in November 1999. This change occurred following Maxwell Lee's brief tenure which ended before her appointment.
